Looks like I've got some serious pesto-making to do this weekend. Here's a couple more recipes I dug out of "The Pesto Manifesto":
Pesto Guacamole
1 cup sour cream
1 tomato, diced
1 tablespoon pesto (see recipe here)
1 ripe avocado, peeled
1 tablespoon lemon juice
Blend all ingredients in a food processor or blender. Add salt and black pepper to taste. Serve with tortilla chips.
Quick Pesto Dip for Chips
1 cup sour cream
1 cup cottage cheese
1 tablespoon pesto
1 teaspoon Dijon mustard
3 to 4 drops Worcestershire sauce
Mix all ingredients well. Serve with fresh veggies, as an alternative.
